But we have to hand it to Rainbow Ice Cream, a small stand in the upper level of the Grandstand who managed to make a dessert that perfectly encapsulates the insanity of state fair food. Extra points to them for finding a totally fresh way of using cotton candy. The Rainbow Cloud Roll is three scoops of ice cream sprinkled with fruity pebbles and hand-wrapped on site in cotton candy. Choose from flavors such as the standard vanilla, strawberry, or chocolate, or go freaking HAM and just get the Superman flavor — it matches with this weird rainbow Frankenstein creation! While I’ll confess to having a high tolerance for sweets—I had a Cake’d Up Celebration Beer later in the day—I didn’t feel like the fluff came anywhere near my tolerance for sweet in one sitting, let alone one day. The fruit flavors in the ice cream and the cereal cut through the cloying sweetness of the cotton candy quite nicely, and the “three scoops of ice cream” inside are small enough to make it manageable. I also succeeded in eating most of it without a spoon, until the cotton candy all melted in my fingers. Would I go back and eat another one? Rainbow Cloud Roll | $6 | Rainbow Ice Cream "In the darkest moment of our tour-de-Fair, after a long run of the stalest and blandest dishes the event had to offer, pure magic entered our lives in the form of the Rainbow Cloud Roll. Three scoops of ice cream (strawberry, vanilla, and chocolate) are rolled in cotton candy along with a crunchy handful of Fruity Pebbles. Something this juvenile and sugary shouldn’t work, but it does: the Pebbles provide a great crunch, the substance of the ice cream complements the ephemeral cotton candy, the thing itself looks magical, and each bite is a strangely compelling delight. Of all the food-disguised-as-other-food gimmicky dessert burritos and savory meat sundaes that the Fair has generated over the years, this one is a true perfection of the form. It is a burrito as sweet and wonderful as the dreams of children. If you don’t like it, then you are an impenetrable cynic and we feel sorry for you. The flavor did not disappoint, either: As you bite through the pillowy layer of cotton candy, the sugar crystallizes, crunching right along with the Fruity Pebbles surrounding the filling.
